In “Garden Spells” by Sarah Addison Allen, lavender bread is just mentioned at the beginning of the book, when the smell of a freshly baked loaf brings back the childhood memories of Sidney Waverley, one of the main characters of the novel. It becomes more prominent in the italian version, which has been titled “Il profumo del pane alla lavanda” (The scent of lavender bread).
Food is absolutely important in all Allen’s books, so much that some of the recipes mentioned in her novels are even reported on her website. In particular, the recipes mentioned in “Garden Spells” have at least one flower among the ingredients, and each one of them has a special “power”: honeysuckle wine gives you the ability to see in the dark, rose geranium produces memories of past good times, and lavender…

In the novel Sidney…
“…tried to slice the bread slowly, but she was so hungry she ended up tearing most of it off. She spread some herb butter on the bread and closed her eyes.”
We immediately thought of a salty, rustic kind of bread. That’s because the word “bread” in Italian is translated with “pane”, a dough made just with flour, yeast and water. So we were pretty surprised to read that there were two cups of sugar among the ingredients on the author’s website!
The scent of simple hot milk infused with lavender is absolutely wonderful, and with sugar and butter… just magic!
You can find the original recipe here, on the author’s website under “Claire’s recipes”. We simply adjusted it a little by halving the amount of sugar according to our taste.
Sarah Addison Allen doesn’t write the recipe of the herb butter, so we made our personal version of it by adding thyme, lemon thyme, lemon balm, honey and lemon zest. We chose these herbs because their citrus scent goes very well with lavender, but you can choose the herbs according to your taste.
This lavender bread looked like a great breakfast recipe, so we tried to toast a few slices in the oven and spread them with the herb butter: defenitely a great way to start the day!
Lavender bread and herb butter
Ingredients
Lavender bread
- 3 tbsp culinary lavender finely chopped
- 3/4 cup milk
- 6 tbsp butter softened
- 2 eggs
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
Herb butter
- 1/2 cup butter
- 1 tsp thyme
- 1 tsp lemon thyme
- 1 tsp lemon balm
- 1 tsp lemon zest freshly-grated
- 1 tsp honey
Instructions
Lavender bread
- Preheat the oven to 325 degrees.
- Grease and flour a 9×5 inch loaf pan.
- Place the milk and lavender in a small saucepan over medium heat and bring to simmering point.
- Remove from heat and allow to cool slightly.
- In a mixing bowl, cream the butter and sugar until smooth.
- Add the eggs and beat until the mixture is light and fluffy.
- In a separate bowl, combine the flour, baking powder and salt; add into the creamed mixture alternately with the milk and lavender and stir until just blended.
- Pour into the pan.
- Bake for 45 minutes (or till a toothpick comes out clean) in the preheated oven.
- Cool in the pan on a wire rack.
Herb butter
- In a small bowl, simply combine all ingredients.
- Please adjust as to your taste.

Leggendo il romanzo “Garden Spells” di Sarah Addison Allen, probabilmente il pane alla lavanda non è la ricetta che rimane più impressa; è appena accennata all’inizio del libro e non è legata a un momento eclatante, piuttosto a profumi e ricordi d’infanzia di Sidney Waverley, una delle sorelle protagoniste. E’ solo grazie alla traduzione italiana che acquista una posizione di rilievo, finendo letteralmente in copertina; infatti il titolo americano è stato tradotto con “Il profumo del pane alla lavanda”.
Sarah Addison Allen è senz’altro una donna a cui piace il cibo, perché nei suoi romanzi se ne parla sempre, e alcuni dei piatti che vengono citati sono riportati sul suo sito personale. In particolare, in “Garden Spells” (che più o meno letteralmente sarebbe “gli incantesimi del giardino”) tutte le ricette nominate hanno fra gli ingredienti almeno un fiore, e ognuno di questi dà un effetto particolare: il vino di caprifoglio permette di vedere al buio, la malvarosa riporta alla mente i bei ricordi, mentre la lavanda…

Nel romanzo Sidney…
“…cercò di afferrare il pane con calma, ma era così affamata che finì per strapparlo. Vi spalmò sopra un po’ di burro”
Questo gesto ci ha fatto subito pensare a una bella pagnottona rustica profumata alla lavanda, ma leggermente salata. Ci siamo quindi piuttosto sorprese leggendo gli ingredienti sul sito dell’autrice! Ci vuole lo zucchero? Due etti?? In effetti, però, gli americani con la parola “bread” intendono sia il nostro pane sia quello che spesso noi chiamiamo “plumcake”.
Il profumo che si spande in cucina dal momento in cui si scalda il latte con la lavanda è meraviglioso, ed è ancora migliore quando si aggiungono il burro e lo zucchero… tipo aromaterapia. Eravamo in dubbio se continuare con la ricetta o fare dei fumenti con l’impasto! E’ davvero un profumo che mette pace … sarà perché la lavanda ha effetto rilassante.
Potete trovare la ricetta originale del pane alla lavanda qui, nella sezione “Claire’s recipes”. Noi abbiamo semplicemente dimezzato la dose di zucchero.
Poiché la ricetta del burro alle erbe non viene inserita sul sito dell’autrice ne abbiamo fatto una nostra versione usando timo, timo limone, melissa e aggiungendo un po’ di buccia di limone grattugiata e del miele. Abbiamo scelto queste erbe perchè il profumo di limone si sposa molto bene con la lavanda, ma potete decidere in base al vostro gusto.
Essendo un plumcake è perfetto per la colazione! Abbiamo anche provato a tostarne alcune fette per poi spalmarvi il burro alle erbe e ci è parso un ottimo modo per iniziare la giornata!
Pane alla lavanda e burro alle erbe
Ingredients
Pane alla lavanda
- 3 cucc. fiori di lavanda commestibile
- 190 ml latte
- 30 g burro ammorbidito
- 2 uova
- 1 etto zucchero
- 255 g farina
- 1 1/2 cuc.no lievito per dolci
- 1 pizzico sale
Burro alle erbe
- 100 g burro ammorbidito
- 5 rametti timo
- 5 rametti timo limone
- 10 foglie melissa
- 1 cuc.no miele
Instructions
Pane alla lavanda
- Preriscaldare il forno a 180°.
- Imburrare uno stampo da plumcake.
- Versare il latte in un pentolino e aggiungere la lavanda.
- Scaldarlo a fiamma bassa e, non appena inizia a sobbollire, rimuovere dal fuoco e lasciare che si raffreddi leggermente.
- In una ciotola amalgamare il burro con lo zucchero.
- Aggiungere le uova e sbattere fino a rendere il composto leggero e soffice.
- In un’altra ciotola unire la farina, il lievito e il sale; aggiungere le polveri al composto alternandole con il latte alla lavanda e mescolare fino a rendere il tutto omogeneo.
- Versare il composto nello stampo.
- Infornare per circa 45 minuti, o finchè uno stuzzicadente inserito nella torta non esca asciutto
- Lasciare raffreddare prima di sformare.
Burro alle erbe
- Unire al burro morbido tutti gli altri ingredienti.
- Assaggiare e modificare in base al proprio gusto.
