The Brioscione: that’s what we decided to cook after reading the book “A neve ferma” (which can be translated as “stiff peaks”) by Stefania Bertola. And we had plenty of recipes to choose from! The book is a succession of sweet and savory delicacies prepared by the employees of the award-winning Pasticceria Delacroix, one of the finest (and, unfortunately fictional)pastry shops in Turin.
There are the Peccatilly (dark chocolate, coffee, chilli, vanilla and cognac), the Fiocchi di neve (snow flakes, with white chocolate, sugar crystals and almonds), the Savoir Faire, with Rum, the Sonetti (chocolate with an eggnog filling), the Bastoncini salati (which are presumably salty breadsticks) and so on!

“A Neve Ferma” is one of those novels that you read with pleasure. Here you can find quirky and funny characters (Emma, Bianca, Camelia, Andrea, Mrs. Elena …) and mouth-watering treats… And you are immediately thrown into a “Midnight Break”, the midnight buffet at Delacroix, or into “Una stella per Natale” (A Star for Christmas), the competition among the ten best pastry chefs in Europe.
So we were spoiled for choice! But here a savory recipe caught our attention. Since we know the basic ingredients of the Brioscione but don’t have the complete recipe, we made our own version of it, creating a puff pastry croissant with a thin herb frittata, spinach simply sautéed with a little olive oil and salt, and ham. We cut the dough into a triangle shape, in order to make it resemble a croissant. We then stuffed and rolled it starting from the base of the triangle. The result was amazing! A simple dish, but definitely flavoursome and tasty! The only caution is not to overdo the filling, to be able to roll the Brioscione without it losing its shape. This is why it is important that the frittata is thin. For an extra touch, you can brush the surface with a beaten egg yolk, so as to make it golden brown.
We decided to cut it into rounds: it would be a great appetizer, or a perfect accompaniment to your aperitif!
If you prefer, you can also make a roll instead of a croissant. In this case, simply stretch the dough on a baking paper and roll it starting from the long side tucking in the filling.
Tip:
Use mozzarella instead of ham for a vegetarian option.

Brioscione
Ingredients
- 1 sheet rectangular puff pastry (about 200 g)
- 100 g ham thinly sliced
- 250 g spinach
- 2 eggs
- 1 egg yolk
- 30 g parmesan cheese grated
- 2 scallions thinly sliced
- 2 tbsp olive oil
- 1 tsp marjoram minced
- 1 tsp thyme minced
- salt
- pepper
Instructions
- In a skillet sauté the scallions in olive oil until tender;
- In a bowl whisk the eggs, seasonings, parmesan cheese and the minced herbs, then add the scallions;
- Add another splash of oil to the skillet, when it’s hot pour in the mix. Cook on both sides until Golden. Remember, the frittata should be thin in order to be rolled in the pastry.
- In another skillet sauté the spinach with a little olive oil and salt until wilted;
- Preheat oven to 200° C;
- If you want to shape it as a croissant:cut the dough into a triangle. Using one of the short sides of the sheet as the base, cut the pastry down its lenght towards the center of the opposite side (we hope to be clear enough…);
then gently elongate the dough on a baking paper;In the center of the pastry put a layer of frittata, add spinach, then top with a layer of sliced ham;Roll the pastry starting from the base of the triangle; then bend the two ends towards you to form the typical croissant shape; - If you want to make a roll:simply stretch the sheet of pastry on a baking paper;In the center of the pastry put a layer of frittata, add spinach, then top with a layer of sliced ham;Roll the dough starting from the long side tucking in the filling;
- Brush the surface with the beaten egg yolk;
- Put it in a baking tray and transfer the “brioscione” to the preheated oven until the pastry is golden brown.

È proprio il Brioscione che abbiamo pensato di riproporre dopo avere letto il libro “A neve ferma” di Stefania Bertola. Anche se, dalla prima all’ultima pagina, è un susseguirsi di prelibatezze dolci e salate preparate dai dipendenti della premiata (e immaginaria) pasticceria Delacroix, fiore all’occhiello della dolce Torino.
Ci sono i Peccatilly (“cioccolato fondentissimo, caffè, peperoncino, vaniglia e cognac”), i Fiocchi di neve (“cioccolato bianco, cristalli di zucchero e mandorle”), i Savoir Faire al Rum, i Sonetti (“cioccolatini con cuore di zabaglione”), i Bastoncini salati e chi più ne ha più ne metta!

A Neve ferma è uno di quei romanzi che si leggono con piacere, tra personaggi improbabili e divertenti (Emma, Bianca, Camelia, Andrea, la Signora Elena…) e golosità che ti fanno venire l’acquolina a ogni pagina… E sei subito catapultato ad un “Midnight Break”, il buffet di mezzanotte della Delacroix, o a “Una stella per Natale”, il concorso tra i dieci pasticceri migliori d’Europa. Avevamo quindi l’imbarazzo della scelta! Ma qui è una ricetta salata che ha attirato la nostra attenzione.
Poiché del Brioscione conosciamo gli ingredienti base ma non la ricetta completa, ne abbiamo fatto una nostra personalissima versione, creando un croissant di pasta sfoglia con all’interno una sottile frittatina alle erbe aromatiche, degli spinaci saltati semplicemente con un po’ di olio e sale, e del prosciutto cotto. Per conferire al tutto il caratteristico aspetto del cornetto abbiamo tagliato la sfoglia a triangolo, tirandolo delicatamente dagli angoli. Lo abbiamo poi farcito e arrotolato partendo dalla base. Il risultato è stato sorprendente! Un piatto semplice, ma decisamente goloso e saporito! L’unica accortezza è di non esagerare con il ripieno, per riuscire poi ad arrotolare il Brioscione senza fargli perdere la forma. Per questo è importante che anche la frittata sia sottile. Per un tocco in più, prima di infornare si può spennellare la superficie con il tuorlo d’uovo sbattuto, così da renderla dorata.
Abbiamo deciso di presentarlo tagliato a rondelle: in questo caso può diventare un ottimo antipasto, o un’idea originale per un aperitivo.
Se preferite, al posto del cornetto potete creare un rotolo. In questo caso, farcite semplicemente la sfoglia e arrotolatela dal lato lungo.
Consiglio:
Utilizzate della mozzarella al posto del prosciutto per un’alternativa vegetariana.
Brioscione
Ingredients
- 1 rotolo pasta sfoglia rettangolare (circa 200g)
- 100 g prosciutto cotto
- 250 g spinaci
- 2 uova intere
- 1 tuorlo
- 30 g parmigliano grattugiato
- 2 scalogni affettati finemente
- 3 cucc. olio di oliva
- 1 cuc.no maggiorana tritata finemente
- 1 cuc.no timo tritato finemente
- sale
- pepe
Instructions
- In una padella saltare gli scalogni in olio di oliva;
- In una ciotola sbattere le uova e unire il parmigiano, le erbe tritate, gli scalogni precedentemente saltati, sale e pepe;
- Ungere la padella con un altro cucchiaio di olio, e una volta caldo versare il composto. Cuocere da entrambi i lati. La frittata deve essere sottile per poter essere utilizzata come farcitura del brioscione;
- In un’altra padella saltare gli spinaci. Aggiustare di sale e pepe;
- Preriscaldare il forno a 200°;
- Per ottenere la forma del croissant: tagliare la pasta sfoglia ricavando un triangolo. Utilizzando come base uno dei due lati corti della pasta sfoglia, tagliare dagli angoli verso il centro del lato opposto (speriamo di essere abbastanza chiare…);Allungare delicatamente la pasta su un foglio di carta forno;Al centro del triangolo posizionare la frittata, aggiungere poi uno strato di spinaci e uno di prosciutto; Arrotolare la pasta sfoglia partendo dalla base del triangolo facendo attenzione a non fare fuoriuscire il ripieno; piegare le due estremità verso di sé per conferire al tutto la tipica forma del croissant.
- Per ottenere un rotolo: posizionare la pasta sfoglia sulla carta forno;Al centro del triangolo posizionare la frittata, aggiungere poi uno strato di spinaci e uno di prosciutto; Arrotolare la sfoglia partendo dal lato lungo;
- Spennellare la superficie con il tuorlo d’uovo;
- Porre in una teglia e trasferire il brioscione nel forno preriscaldato; cuocere fino a completa doratura.
