TRADUZIONE ITALIANA
Harry Potter’s books are among those I hold close to my heart. They’re not stories of my childhood, when I read them I wasn’t a kid anymore, but they still warm my heart making me feel nostalgic, as all childhood memories do.
Waiting for each publication was almost a torture, but when the new book finally came out… Oh God, what a feeling! I can only imagine what a magical experience must have been growing up with Harry. However, since the story and J.K.Rowling’s style became more complex with each book, I think some nuances are better understood by an adult reader (or re-reader). But I must be an exception, because I didn’t get a key moment in the story, such a moving passage that when was explained to me, it made my heart clench and my eyes tear up. I can’t believe I didn’t get it! I won’t get specific cause I don’t want to spoil the books, and also because “here at Talespoon” there’s still someone who hasn’t read Harry Potter. And since Talespoon consists of two people, this “someone” can only be Ilaria…
I said “still”, because, at last, after years of recommendations, she decided to read them! And I already know she won’t regret it. I just can’t wait to discuss the books with my friend!!! Finally!!
This occasion deserved an on-theme recipe and, since it’s Christmas time, we decided for a Christmas dessert: a fruitcake, that Ilaria developed as a vegan recipe.
You can find fruitcakes almost all whole over the world, and every place as its own version. For example, in Italy a very famous fruitcake is the tuscan “panforte”, or in Liguria we have the “pandolce”, typical of the city of Genoa. Fun fact: in Great Britain you can find a “Genoa cake”, but it’s not like pandolce. One of the differences is that the British version doesn’t have pinenuts, which are an essential ingredient in the genoese fruitcake.
A fruitcake is mentioned in “Harry Potter and the Goblet of fire” when Mrs. Weasley sends the little owl Errol, to deliver it to Harry during summer break, when Harry’s cousin Dudley is on a diet and Aunt Petunia decides that the whole family has to starve together with her son…
“Mrs Weasley, however, had sent the family owl, Errol, with an enormous fruitcake and assorted pasties. Poor Errol, who was elderly and feeble, had needed a full five days to recover from the journey.”
Unfortunately, we don’t know how Mrs. Weasley prepares it, and since we don’t have her “Enchantment in baking” recipe book, Ilaria decided to make this dessert without eggs or dairy products. She used almond flour, pecan nuts, candied cherries, sweet Marsala wine and spices.
Mrs Weasley’s fruitcake
Ingredients
For the cake
- 200 g all-purpose flour
- 100 g almond flour
- 50 g cornstarch
- 50 g candied orange peel
- 50 g candied cedar peel
- 50 g candied cherries
- 60 g dark chocolate
- 60 g pecan nuts
- 80 g cane sugar
- 100 g sunflower oil
- 100 ml marsala
- 2 tsp mixed spiced
- 1 tsp baking powder
- 1 pinch salt
To garnish
- 2 tbsp Seville orange marmalade
- pecan nuts, almonds, candied cherries
Instructions
- Preheat the oven to 180°
- Grease and flour a 15-cm pan.
- In a bowl, combine flour, cornstarch, almond flour, baking powder, sugar, salt and mixed spices (we used cinnamon, ginger and nutmeg).
- Add the candied fruit, chopped pecan nuts and chocolate, then stir well.
- Add the Marsala and oil.
- With your hands knead the dough briefly. If it’s too dry, add another splash of Marsala.
- Place the dough into the baking tray, pressing it eavenly with your hands.
- Decorate the cake as you like.
- Bake 30 minutes at 180º. When it comes out of the oven, the cake should be still soft (it will harden up as it cools). The result will be a moist cake. If you prefer it a little less moist, bake for another 10 minutes.
- Remove from the oven and allow it to cool.
- Place two tablespoons of marmalade and a plash of water in a small saucepan over low heat, allowing it to melt.
- Remove from heat and brush the surface of the cake with the marmalade.
TRADUZIONE ITALIANA:
