Another recipe from the book “Garden Spells” by Sarah Addison Allen. Like the lavender bread that inaugurated Talespoon, it is just mentioned in the pages of the fourth chapter of the novel.
“Sydney snagged a slice of bread as Claire made the sandwiches and put them on a plate. “Claire learned all these crazy recipes from our grandmother.” “This isn’t a crazy recipe. This is soup and peanut butter and jelly sandwiches”. Sydney winked at Tyler. “Almond butter and ginger jelly sandwiches”.
While a chamomile chicken soup is simmering on the stove, Claire prepares some sandwiches with slices of wheat bread, almond butter and ginger jelly. Her sister Sidney, who has invited Tyler for lunch, points out the strangeness of the recipe: not just the classic peanut butter, not the usual strawberry jam, but a delicate almond butter, combined with the peculiarity of ginger jelly. And, last but not least, slices of rustic bread, far away in consistency and flavour from the boring white sandwich bread.
This match was intriguing. A ” recipe /non-recipe ” in itself, the simplest and most immediate solution for breakfast, for a snack or dinner (as in this case), easy and fast, but the peculiarity of its ingredients makes it special, as it happens with all Claire’s recipes.
For this reason we HAD to recreate it in our own way. With our minds focused on the deliciousness that was waiting for us, we prepared a spread of roasted almonds and cashews and a ginger jam.
Roasting the nuts enhances their natural sweetness. We have left the skin of the almonds on, as it gives the spread a nice and hearty texture. The only other ingredient you need is… patience (and a good food processor or blender). As for the jam, we added an apple and the juice of an orange to the ginger, just to boost its flavour. Two simple preparations that match just perfectly. And on a slice of sourdough bread… you wouldn’t stop eating them… Heaven!
Almond butter and ginger jelly sandwich
Ingredients
Ginger jelly
- 250 g ginger fresh
- 170 g cane sugar
- 170 ml water
- 1 orange juice
- 1 apple
- 1 lemon juice
- 1 lemon zest grated
Almond butter
- 300 g almonds skin on
- 200 g cashews
Instructions
Ginger jelly
- Peel the ginger, slice it and then chop it in a food processor (or grate it if you prefer)
- Place the ginger with the sugar, water, lemon zest, lemon juice and orange juice in a saucepan.
- Bring to a simmer and then let cook for about 30 minutes.
- Meanwhile you can sterilize the jar.
- When the jam is cooked pour it in the jar and seal it immediately.
Almond butter
- Preheat the oven to 180°.
- Put the nuts in a large baking tray and roast for about 10 minutes.
- Let them cool slightly, then transfer them in a food processor.
- Blend until smooth and creamy.

Sandwich al burro di mandorle e marmellata di zenzero
“Claire non rispose e andò dritta al contenitore per il pane. Prese una pagnotta integrale e iniziò ad affettarla per preparare dei sandwich.”
Un’altra ricetta tratta dal libro “Garden Spells” di Sarah Addison Allen. Anche questa, come il pane alla lavanda che ha inaugurato Talespoon, appena accennata tra le pagine del quarto capitolo del libro.
“Sidney staccò un pezzetto di pane mentre Claire preparava i sandwich e li disponeva su un piatto. “Mia sorella ha imparato tutte queste ricette folli dalla nonna.” “Queste non sono ricette folli, solo zuppa e panini al burro di arachidi con gelatina.” Sidney ammiccò a Tyler. “ Panini al burro di mandorle e alla gelatina di zenzero.”
Mentre una chamomile chicken soup, una zuppa di pollo e camomilla, ribolle sul fuoco, Claire taglia a fette del pane integrale, su cui spalma del burro di mandorle e della marmellata di zenzero. La sorella Sidney fa notare al loro ospite che si tratta di una ricetta “bizzarra”: non il classico burro di arachidi, non la solita marmellata di fragole, ma un delicato burro di mandorle, accostato alla peculiarità della marmellata di zenzero. Il tutto spalmato su fette di pane rustico, ben lontano come consistenza e sapore dal solito pane bianco da sandwich.
Questo connubio ci ha subito incuriosito. Una “ricetta non ricetta” di per sé, quanto di più semplice e immediato possa esistere per una colazione, una merenda, o una cena (come in questo caso) veloce e poco impegnativa, ma che utilizza due ingredienti che la rendono particolare, speciale (come in fondo un po’ tutte le ricette di Claire).
Era d’obbligo, quindi, provare a ripeterla a modo nostro. Per farlo abbiamo preparato una crema di mandorle e anacardi tostati e una confettura di zenzero.
La tostatura della frutta secca esalta la loro naturale dolcezza. E Alle mandorle abbiamo lasciato la “pelle”, che rende la crema un po’ più rustica e saporita. L’unico altro ingrediente che occorre è… la pazienza (e un mixer abbastanza potente). Per la marmellata, allo zenzero abbiamo aggiunto una mela, della scorza di limone e del succo di arancia per esaltarne il sapore. Due preparazioni semplici di per sé ma che si sposano divinamente tra loro. Spalmate su una fetta di pane a lievitazione naturale… non si smetterebbe più di mangiarle!
Sandwich al burro di mandorle e gelatina di zenzero
Ingredients
Gelatina allo zenzero
- 250 g zenzero
- 170 g zucchero di canna
- 170 ml acqua
- 1 arancia scorza e succo
- 1 mela
- 1 limone scorza e succo
Burro alle mandorle
- 300 g mandorle con la pelle
- 200 g anacardi
Instructions
Gelatina allo zenzero
- Pelare lo zenzero, affettarlo e tritarlo in un robot da cucina (se preferite potete grattugiarlo).
- Mettere lo zenzero in un pentolino, poi aggiungere lo zucchero, l’acqua, il succo e la scorza del limone, una mela affettata e il succo dell’arancia.
- Portare a ebollizione e lasciare cuocere per circa 30 minuti.
- Nel frattempo potete sterilizzare i vasetti di vetro.
- Quando la gelatina sarà cotta versare il composto nei vasetti di vetro e chiudere immediatamente.
Burro alle mandorle
- Preriscaldare il forno a 180°
- Posizionare le mandorle e gli anacardi in una teglia larga e farle tostare per circa 10 minuti, prestando attenzione a che non brucino.
- Lasciarle raffreddare, poi trasferire il tutto in un robot da cucina.
- Tritare fino a che il composto non risulterà liscio e cremoso, facendo attenzione a non surriscaldare il robot.
