  • 110 g butter
  • 80 g brown sugar
  • 1 egg
  • 160 g flour
  • 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 80 g dark chocolate
  • 150 g pistachios (or 100 g pistachios and 50 g salted pistachios)


  • Stir softened butter and sugar until combined.
  • Add 1 egg and stir.
  • In a bowl stir the flour, baking powder, baking soda and salt together, then add this mix to the egg and butter mix.
  • Grind about 100 g of pistachios and fold them in.
  • Then chop the rest of the pistachios and add them to the mix
  • chop the dark chocolate and fold it in.
  • Preheat the oven (about 180 ° C )
  • Scoop balls of cookie dough on a baking sheet. (you should leave a space of about 3-4 cm in-between)
