Red lentil soup

Ingredients

  • 250 g red lentils with seed coat on (or buy them without it if you want them to cook quickly. Without seed coat they're a bright orange color)
  • 7 onions
  • 7 garlic cloves
  • 1 tsp turmeric
  • 4 tsp cumin ground
  • black pepper ground
  • 1 ½ litre vegetable broth
  • olive oil
  • salt

Instructions

  • Rinse the lentils
  • Put the lentils in a saucepan with just enough water to cover them. From boiling point cook for about 10 minutes
  • Keep them aside with the lid on the pot.
  • Make the veggie broth
  • Slice 6 onions and the garlic
  • In the pot where you'll cook the soup putsome olive oil and when warm add the onions and the garlic. Let them fry till they get golden
  • Add the spices and stir
  • Add the lentils and stir
  • Add the broth and let cook the soup for about 1 hour, or until the lentils are soft
  • Slice the remaining onion and fry it in a saucepan with some olive oil until they're golden and crunchy
  • Sprinkle them on the bowls of soup when it's time to serve
