Almond butter and ginger jelly sandwich

Ingredients

Ginger jelly

  • 250 g ginger fresh
  • 170 g cane sugar
  • 170 ml water
  • 1 orange juice
  • 1 apple
  • 1 lemon juice
  • 1 lemon zest grated

Almond butter

  • 300 g almonds skin on
  • 200 g cashews

Instructions

Ginger jelly

  • Peel the ginger, slice it and then chop it in a food processor (or grate it if you prefer)
  • Place the ginger with the sugar, water, lemon zest, lemon juice and orange juice in a saucepan.
  • Bring to a simmer and then let cook for about 30 minutes.
  • Meanwhile you can sterilize the jar.
  • When the jam is cooked pour it in the jar and seal it immediately.

Almond butter

  • Preheat the oven to 180°.
  • Put the nuts in a large baking tray and roast for about 10 minutes.
  • Let them cool slightly, then transfer them in a food processor.
  • Blend until smooth and creamy.
