Lavender bread and herb butter

Ingredients

Lavender bread

  • 3 tbsp culinary lavender finely chopped
  • 3/4 cup milk
  • 6 tbsp butter softened
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder

Herb butter

  • 1/2 cup butter
  • 1 tsp thyme
  • 1 tsp lemon thyme
  • 1 tsp lemon balm
  • 1 tsp lemon zest freshly-grated
  • 1 tsp honey

Instructions

Lavender bread

  • Preheat the oven to 325 degrees.
  • Grease and flour a 9x5 inch loaf pan.
  • Place the milk and lavender in a small saucepan over medium heat and bring to simmering point.
  • Remove from heat and allow to cool slightly.
  • In a mixing bowl, cream the butter and sugar until smooth.
  • Add the eggs and beat until the mixture is light and fluffy.
  • In a separate bowl, combine the flour, baking powder and salt; add into the creamed mixture alternately with the milk and lavender and stir until just blended.
  • Pour into the pan.
  • Bake for 45 minutes (or till a toothpick comes out clean) in the preheated oven.
  • Cool in the pan on a wire rack.

Herb butter

  • In a small bowl, simply combine all ingredients.
  • Please adjust as to your taste.
