They ate in an easy silence, reveling in the creamy lemon tart in front of them. After a while, Isabelle spoke again. “You know,” she said, holding up a forkful, “I am starting to think that maybe memories are like this dessert. I eat it, and it becomes a part of me, whether I remember it later or not.”
It’s not specified in the book, but we decided to make single portion tarts and we absolutely loved how they turned out! In particular we are very happy with our decision to add toasted and finely chopped pine nuts and almonds to the pastry. It gave a very nice aroma and texture and combined perfectly well with the lemon filling. Delicious! We hope you enjoy it!
Creamy lemon tarts
Ingredients
Pastry
- 150 g pastry flour
- 100 g butter
- 100 g sugar
- 50 g pine nuts
- 50 g almonds
- a pinch of salt
Filling
- 1 egg
- 100 g sugar
- 60 g flour
- 4/5 lemons
- water
- lemon zest
To garnish (optional)
- whipped cream
- icing sugar
Instructions
- Toast the almonds and pine nuts on low heat.
- Let them cool a bit, then grind them in a food processor
- In a bowl, combine the nut flour, the pastry flour, butter and sugar and mix until the dough comes together.
- Cover with cling film and leave in the fridge.
- For the filling, beat together the egg and sugar, then add the flour.
- In a bowl squeeze the lemons, add some grated lemon zest and add enough water to reach 500 ml of liquid.
- Add the liquid to the mixture of egg, sugar and flour.
- Transfer the mixture into a saucepan and heat over medium heat, constantly stirring with a wooden spoon, until it comes to a boil. Set aside.
- Preheat the oven to 180°.
- Grease and flour single-portion tart pans.
- Take the pastry out of the fridge.
- Roll the pastry dough, then cut it into rounds and press them into the tart pans.
- Stab a few holes in the bottom with a fork, then line the tart with foil and fill with dried beans.
- Bake for 10 minutes, then discard the foil and bake for another 5 minutes or until golden.
- When the tarts are ready, remove them from the oven, let them cool a bit and pour in the lemon mixture.
- Garnish with whipped cream (optional).

Crostatine alla crema di limone
Un’altra ricetta dal libro “la scuola degli ingredienti segreti” di Erica Bauermeister, un altro momento tratto dalla cena descritta nel capitolo dedicato a Isabelle: il dessert.
Mangiarono in un confortevole silenzio, godendosi la crostata al limone davanti a loro. Dopo qualche istante, Isabelle parlò di nuovo. “Sai,” disse, alzando con la forchetta un pezzo di crostata, ” Inizio a pensare che forse i ricordi sono come questo dessert. Non è specificato nel libro, ma noi abbiamo deciso di preparare piccole crostatine monoporzione, e siamo state molto contente del risultato! Più di tutto ci ha soddisfatto l’idea di aggiungere pinoli e mandorle tostati e tritati finemente all’interno della frolla: ciò ha conferito alla base un aroma delizioso e una consistenza perfetta, che si sposano a meraviglia con il ripieno al limone. Squisite! Speriamo le gradiate anche voi!
Crostatine al limone
Ingredients
Per la base
- 150 g farina
- 100 g burro
- 100 g zucchero
- 50 g pinoli
- 50 g mandorle
- una presa di sale
Per la crema al limone
- 1 uovo
- 100 g zucchero
- 60 g farina
- 4/5 limoni
- acqua
Per decorare (facoltativo)
- panna montata
- zucchero a velo
Instructions
- Tostare a fuoco basso le mandorle e i pinoli in un pentolino.
- Lasciarli raffreddare, poi frullarli finemente.
- In una ciotola unire le mandorle e i pinoli frullati, la farina, lo zucchero, il burro e il sale e impastare con le mani fino a ottenere un impasto omogeneo.
- Coprirlo con della pellicola trasparente e riporlo in frigorifero.
- Per la crema, lavorare le uova e lo zucchero con una frusta, aggiungere poi la farina.
- In una ciotola spremere i limoni, aggiungere la scorza grattuggiata e infine aggiumgere tanta acqua da raggiungere 500 ml.
- Aggiungere il liquido al composto di uova.
- Trasferire il composto in un pentolino e scaldarlo a fuoco basso, mescolando continuamente con un cucchiaio di legno, fino a bollore. Togliere dal fuoco.
- Riscaldare il forno a 180°.
- Imburrare gli stampi per le crostatine.
- Rimuovere la frolla dal frigo, stenderla con un mattarello e tagliarla in cerchi. Sistemare questi ultimi negli stampi.
- Bucherellare il fondo delle crostatine con i rebbi di una forchetta, poi sistemare dei fogli di carta forno sulle frolle e aggiungere dei fagioli secchi per fare una cottura in bianco.
- Cuocere per 10 minuti, poi rimuovere i fagioli e i fogli di carta forno e continuare la cottura per altri 5 minuti o fino a doratura.
- Quando le basi sono pronte rimuoverle dal forno, lasciarle raffreddare e una volta tolte dagli stampi, riempirle con la crema al limone.
- Decorare con ciuffi di panna montata (facoltativo).
